I’m Chef Greyson Parker, and if there’s one thing I’ve learned, it’s that food is more than flavor—it’s resilience, creativity, and connection. As the founder and executive chef of Scoops Baking Co., my journey has been anything but ordinary. From an unexpected introduction to the culinary world as a teenager to refining my craft in New York City’s high-paced pastry kitchens, every experience has shaped my approach to baking.

 

But Scoops isn’t just about technique or tradition. It’s about rethinking indulgence—creating desserts that feel nostalgic and indulgent, without the fear or limitations that come with food sensitivities, allergies, or health concerns.

FROM A CHALLENGING START TO A SWEET VISION

I grew up in upstate New York, where independence came early. As an emancipated minor, I navigated life’s challenges with the support of those who believed in me—one of them being my high school guidance counselor, who encouraged me to explore culinary arts. At the time, I thought it was just an easy elective. I had no idea it would shape my future.

 

That’s where I met Chef Desmond, a no-nonsense, Irish Catholic chef who taught discipline, humor, and resilience in equal measure. His kitchen wasn’t just a classroom—it was a training ground for life, where the lessons extended far beyond knife skills. He prepared us for a world that demanded excellence, adaptability, and strength.

 

After high school, I took those lessons to New York City, where I worked under a renowned pastry chef, refining my craft in an environment that demanded precision, patience, and an unrelenting commitment to quality. New York didn’t just shape my skills—it shaped me.

WHEN EVERYTHING CHANGED

Just as I was finding my stride, the global pandemic halted everything. The fast pace, the opportunities, and the certainty I had built disappeared overnight. But in that stillness, something became clear: food wasn’t just my career—it was my calling.

 

I realized that baking could be more than just indulgence—it could be a source of comfort, a bridge between health and joy, and a way to bring people together, regardless of dietary restrictions. That realization became the foundation for Scoops Baking Co.

SCOOPS: DESSERT, REIMAGINED

In 2024, I launched Scoops Baking Co., built on the belief that dessert should be inclusive, intentional, and undeniably delicious. Every treat is:
